Pumpkin Seeds

The pumpkin dates back to around 5,000 BC and it is native to Central America. In Mexico and Spain is known as nuggets or pipes to seeds of different plant species, particularly those of Cucurbita maxima, C. moschata and C. pepo, popularly known as the three pumpkin. They are edible and are eaten roasted. They are prepared by soaking in saturated salt water, and making them roasted on a griddle with salt; They are also used to prepare a variety of mole known as pepian or pipián.
